Firebake Bakehouse and Restaurant @ East Coast Road

Firebake - Woodfired Bakehouse and Restaurant is a unique bakehouse and restaurant featuring Singapore's first-ever full-scale woodfire bread oven.

Behold the restaurant's centerpiece - a pair of woodfire bread ovens hand-built from 37 tonnes of brick, sand and mortar, in which the bread is baked and selected dishes are slow-cooked.

The types of bread available.

Spot the bacon loaf!
Firebake Bread Board ($10)
The breads come with a selection of butters to choose from and truthfully, I prefer eating my bread as it is. Our board was a selection of organic sour doughs and the fig raisin was exceptionally outstanding for me. The embedded dried fruit and thick crust was very enjoyable.

Woodfired Pumpkin, Burrata, Pistachio Dukkah, Orange Blossom, Molasses ($16)
Burrata was tasting more like a mozzarella instead of the creamy and soft burrata that I am used to. Pumpkin and the other condiments made up for it with the eyepopping colours.

Woodfired Jerusalem Artichoke Soup ($15)
Almost like artichoke puree, this was an acquired soup dish.

Smoked Eggplant, Spiced Hummus, Tomato, Machego ($15)
I've clearly been spoilt by the Japanese Nasu and miso, this was just more colourful than tasty.

Bacon Meat Loaf, Bean Stew , Sunny Side Up Egg On Wave ($20)
Wave refers to organic white sourdough loaf in their bakery and I half expected the bacon meat loaf to be over brined. Surprise surprise when it was seasoned just right, tasting just like a firmer version of luncheon meat draped in bacon. I wish there was less of the bean stew and more slices of meat loaf.

Pulled Lamb Shoulder and Tzatziki on Field ($24)
Pulled lamb shoulder, a minty herby and creamy tzatziki on a crusty organic wholemeal sourdough slice. I am no bread gourmet but their breads are made fresh and are absolutely delicious with the dips or best, eaten on its own.

Breakfast at Firebake was prompt, no fuss and somewhat rushed. Plates were cleared too quickly, dessert menus shoved and while dishes were not stellar, it was acceptable for a Sunday get together. Only serious bread lovers, apply.
If all else fails, they have gorgeous crockery and decent coffees.
