Flavours of Rajashan @ Tiffin Room, Raffles Hotel Singapore

Image
~Invited Session~ I had the pleasure to taste Chef Kuldeep Negi’s Rajasthani dishes, inspired by his culinary trips to the ancient capital city with its own distinctive culture. The Tiffin Room at Raffles Hotel Singapore presents a special Flavours of Rajasthan menu with an exquisite smorgasbord of culinary delights, available from 13 – 27 January 2022.    ‘Kanji Vada’ , a cold soup starter alike gazpacho We began the dinner and Chef Negi immediately showed off his depth of culinary repertoire with a bold choice of a cold soup starter. Kanji Vada is a Rajasthani delicacy of deep-fried yellow lentil dumplings served in a refreshingly chilled mustard and asafoetida water. This whetted my appetite and I couldn’t wait for the next few courses!     Lamb chop with onions, coriander seeds, and cardamon. ‘ Banjara Gosht ’ The first meat dish of the night showed that Chef Nagi really meant business here; a masterful showcase of bold spices and smoky flavors with flowery cardamon peeking throug...

Seafood on ice Featuring an incredible array of seafood (I lost count after 60 different types, no kidding!), Marriot Café wants you to create your own smorgasbord of divine seafood at your own leisure. Fresh mussels and snow crab Did I mention I am a seafood lover? I was awestruck at the incredible selection and wasted no time diving into the fresh seafood here! It wasn’t long before the shells began to pile up at my table, but thankfully the service here was delightfully brisk and courteous, they took away my shells quickly so I gave myself more refills! Grilled seafood If raw and fresh seafood isn’t your thing, fret not! There is also a great selection of sumptuous grilled seafood that is grilled in small batches, ensuring that your seafood is as freshly cooked as possible. You can even ask the chefs there to cook yo...

Image
~Invited Session~ Chinese New Year at the Golden Peony at Conrad Singapore is a feast for the eyes and stomach. Expect top quality ingredients presented in inventive manners that at the same time does not deviate from its Cantonese traditions. Executive Chinese Chef Ku Keung is trained in Cantonese cooking, but has been living in Shanghai for quite some time. It is quite obvious that he has brought in some Shanghainese influence into his food! Fortune 3-D Meringue Yu Sheng with New Bedford Scallop, Salmon, Crispy White Bait, and Fish Skin Golden Peony is also known for its over-the-top Yu Sheng food masterpieces, and this year is no different. Other than being a feast for the eyes, they certainly do not stinge on the ingredients! The picture itself can hardly do justice to the massive size of this Yu Sheng! The customary Chinese incantations and blessings English version as well! I was quite tickled by the literal translations! Everyone was waiting to toss the mixed ingredie...

[Discount Code!] Superior Bird's Nest and Chia Seeds

Image
~Invited Session~ Chia seeds, the legendary superfood, is commonly believed to aid heart and digestive health, stabilise blood sugar and maintain stronger bones and teeth. They are great for cleansing and detoxing; however, they are not commonly used in cooking. So I was game to see how it could be incorporated into Chinese dishes. I met Freddy Yap, CEO of Superior Foods, who through his own personal struggle with health throughout the years led to him taking chia seeds regularly. His recovery and further personal research convinced him that chia seeds were not only very beneficial for health, but for beauty and weight loss as well. He started Superior brand to bring its benefits to the masses. A personal ethos of Freddy is that building a brand with a strong reputation and a business with integrity is paramount. He believes in that taking care of your body, mind and spirit, you can in turn, take care of others through your business. Superior Chia seeds is a blend of fiv...

Escape Restaurant & Lounge @ One Farrer Park Hotel & Spa

Image
~Invited Session~ Escape with your senses at Escape Restaurant & Lounge with skilled chefs and be spoiled for choice with fresh local and international cuisine from an open format interactive kitchen (NOT a buffet!). Why an interactive kitchen? Most of the food is made-to-order unlike a traditional buffet, and therefore fresh, and wholesome. Fresh seafood to start! A myriad of starters. I love copper pots and these rows of pots with Indian cuisine looked really inviting. A must have at all buff- I mean interactive kitchen experiences! I'm a sucker for fresh bread. Escape Restaurant & Lounge also prides themselves in providing healthy but tasty cuisine options. If you would like your food done with less oil, less fat, or less seasoning, just ask! The skilled chefs on standby would be happy to accommodate to your dietary needs. I had this done with less oil, still tasted great for me! You can never do without Japanese food if you wanna eat clean. A meal is incomplet...

CNY 2016: Resorts World Singapore: Forest森, Feng Shui Inn and Avenue Joffre!

Image
~Invited Session~ Chinese New Year is a time for family gatherings and nosy questions and strange relatives you have only seen once a year. For those who have to do the cooking, it is also a time of tremendous stress, jostling with overly-competitive aunties vying for the last piece of fresh sea cucumber. Save yourself the stress, and make your way down RWS for your reunion meal! For those of you who may not have a large family to begin with, Forest 森  is your answer. Forest 森  serves a menu for a min. of 2 pax. No more excuses not to get together! Forest's take on the yusheng, with geoduck clams. Yes, they have small portions of yusheng if you want it! The clams made this a very flavorful affair.  Clear spicy soup with beancurd strands. It looks harmless, but you have been warned. This was surprisingly hearty to me. I was expecting something light and the peppery spiciness zing at the end of each sip made me just wished I had a whole pot to drink. Roasted duck is a must dur...
